The Tasting Room at City of Dreams Manila
The Tasting Room at Nuwa—the rebranded Crown Towers—goes all-out with its haute French cuisine with Asian infusions especially prepared to awaken your senses. Chef de Cuisine Frederic Thevenet’s five-course V-Day Tasting Menu starts with an appetizer of smoked haddock with lentils, egg yolk, caviar, brandade (salt cod and olive oil emulsion) and lettuce; followed by the lobster tartare with clementine orange, lambanog, sauce Américaine, and vegetables à la Grecque; and pineapple-papaya with banana ketchup, celery jelly, and pink pepper, for an intermezzo. Those are just starters, by the way—the main course is a tenderloin beef pot au feu with crosnes (Chinese artichoke), leeks, and truffle vinaigrette, with a dessert of chocolate papillote with pear.
