After 7 Months, Gallery by Chele Will Finally Reopen on October 1
One of the country’s leading restaurants in fine dining is finally opening its doors once more to dine-in services after seven months of lockdown. Adapting to the new normal, Gallery by Chele has gone beyond the required health and safety protocols to gives its customers a taste of the dining experience once taken for granted pre-pandemic.
“The first few months during the community quarantine were a challenge. As we grappled with reality of this pandemic, my team and I struggled to figure out how to keep our Gallery family safe and secure,” says Gallery by Chele’s chef and partner, Chele Gonzalez. “Now, we feel more self-assured. We know who we are as a restaurant, what is important to us and our guests and how we can make dining at Gallery by Chele not only a memorable experience but a safe one as well.”
The restaurant is now equipped with QR codes to access the menus, UV boxes for cutlery, and hand sanitizers at every corner. Every table and chair is sanitized every couple of minutes. And then it’s sanitized again just for good measure. The setup is a little more spacious than before due to social distancing requirements, but it only adds to the unique atmosphere at Gallery by Chele, making the private dining experience even more private.

And while planes might be grounded for now, you can explore the world through the variety of cuisines available at the restaurant, from dishes that speak of the Philippines’ culinary heritage, to Gonzalez’s signature Spanish dishes that were inspired by his mother’s home cooking.
“Dining with us is therapy for the soul. As our guests take a journey around the Philippines, Asia and the world through our menus, we hope to set our guests free,” exclaims Gonzalez.
The Gallery at Home Spanish Signatures is one of the restaurants innovations during quarantine when restaurants were only limited to takeout and delivery services. Quarantine might have kept everyone at home, but it planted the seeds of these new dishes which are inspired by the acclaimed chef’s childhood.

“Quarantine was never an excuse to stop dreaming,” Gonzalez says. “The process of research and development never stopped. We played with new ideas, deconstructed old ones and with inspiration from the best local sustainable producers, we cannot wait to share our amazing creations.”
The new normal might be upon us, but Gallery by Chele still remains as a reminder of the sheer talent of the Philippine food industry.
