The Burnt Basque Cheesecake is the centerpiece of Chef Chele’s Kitchen, a culinary partnership between the renowned chef and his wife, Teri. 

Slice into it and discover an almost cloudlike interior, waves of silken, cheesy goodness. It’s quite simple really, a confection of cheese, cream, eggs, and flour that everyone’s been baking during this lockdown, alongside Dalgona coffee and sourdough. And yet, in Gonzalez’s hands, it is elevated several notches, starting with its premium ingredients.


“Seventy-five percent of a cheesecake recipe is cheese. All our ingredient are of the best quality,” says Chele. “An important characteristic of our cheesecake is its creamy, magical texture.”

“Chele works long hours at Gallery by Chele. So any time we have together is special for both of us When we bake together it's  more than just cooking, it’s a date,” says Teri. “The love that we set in the Burnt Basque Cheesecake and the passion behind this recipe is our love  story.”

 “We bake and have fun together. It’s just pure love,” says Chele.

Early on in his career, Chele worked for several years at Arzak in the Basque coastal city that is San Sebastian, and has baked this cheesecake many times over the years for family and friends.

“Chele has kept this recipe for many years.  Slowly, the original recipe has changed, evolved and become even better. The recipe is now truly his own,” says Teri.
