Finestra Welcomes BeefBar Chef for a Limited Time
There is nothing much on the plate: an oversized white disc where, at the center, is a nugget of beef, brown all around but prettily pink in the middle; beside it is a dollop of mashed potatoes. There are no extra garnishes, no superfluous sauces, no gimmicks. Just a glorious chunk of perfect meat, enough for the perfect bite.
That's how chef Andrea Spagon operates—with well-thought, well-crafted simplicity that guarantees a lasting impact. The Italian chef runs Hong Kong's Beefbar, a Michelin-starred eatery that revolves around beef and pushes all the ways people can enjoy this beloved meat.
Spagon is coming to the Philippines for the third run of Solaire's Culinary Masters series. The resort previously invited three-Michelin-starred chef Jun Yukimura and celebrity chef Justin Quek. Spagon is bringing more than an expertise in beef. His menu takes the diner around his varied skill set.
The beef is amazing, expectedly. Short ribs sliced paper-thin then preened with yuzu ponzu sauce, celery, and red onions. Then there is that crossbred Australian Wagyu striploin that's served as is: a beautiful albeit small cut of meat cut seasoned to precision.
There is risotto, too, savory from fennel then crowned with a seemingly unassuming pork belly that vanishes when you put it inside your mouth, except for the skin which crackles as soon as you bite into it.
Spagon has also created a langoustine ceviche and tuna avocado tacos because not everything is about meat.
