Freezer Burn's newest ice cream is Christmas in a hexagon
Before chefs Kristine Lotilla and Miko Aspiras launched Freezer Burn in July 2016, they had a total of 40 flavors ready for the ice cream-loving public. But when your restaurant is only slightly bigger than the average walk-in closet, you have to trim down—and trim down they did to a very conservative set of eight. Upon opening, however, the pair made a promise to debut every single one of their creations, as they see fit. And, just because it's Christmas, we're finally meeting four of them.
Peppermint Candy Cane, White Christmas, Santa's Fave
Those who've been dreaming of a white Christmas might find satisfaction in a composed dessert of mascarpone ice cream with freshly baked brioche. Just like a blanket of fresh snow, the White Christmas is swathed in vanilla sauce.
The Peppermint Candy Cane is a blatant reminder of the season. It's a spin on their mint straciatella but with the addition of the minty red-and-white candy in the ice cream. Paired with fudge brownies, this flavor sings Christmas carols in your mouth—makes you want to sing for more than just one serving.

White Christmas
Local traditions must be respected and that's where the Simbang Gabi comes in. It puts together bibingka, a Christmas classic, with salted egg ice cream. It's a clever way to update familiar flavors.
But nothing quite captures the flavor of the holiday like the Santa's Fave. While the other flavors are more direct in their inspirations, this dessert is a simple combination of cinnamon ice cream and chocolate cookies. They're flavors we can enjoy all year 'round, but that spicy smell, the rich chocolate, the memories that come pouring in. Priceless.
