Gallery Vask Remains the Philippines' Top Restaurant
UPDATED Chef Chele Gonzalez and Carlo Calma's Gallery Vask is once again the only Philippine establishment included in the latest Asia's 50 Best Restaurants ranking. This year, the purveyor of anthropological cuisine climbed ranks, moving from 39th place to 35th.
Vask opened at the Clipp Center in March 2013, with the fine-dining Gallery Vask following a few months later. The latter features degustacion menus highlighting Filipino flavors interpreted in modern ways.
Chef Chele, who hails from Torrelavega Spain and worked in the world-renowned kitchens of El Bulli, Noma, Arzak, and more, goes beyond putting the spotlight on food. He's toured the Philippines in search of ingredients, discovering the culture and traditions behind them and making sure that such stories are woven into the final dish—thus creating his signature "anthropological" style.
The list was unveiled yesterday, February 21, in Bangkok, Thailand. Bangkok's Gaggan claimed the top spot for the third year in a year while Singapore's Restaurant Andre (former third) climbed to second place. Former No. 2 Narisawa (Japan) dropped to sixth.
“I didn’t expect this to happen again for the restaurant because there are so many great new places in Asia to dine. But to be recognized means that all our hard work has truly paid off,” says Chef Chele. Carlo concurs: “This win is so meaningful for us. Because to win once means your good. To win twice must mean that you’re onto something really, really good…so we’re excited to continue this journey.”
Gallery Vask is not the first Philippine restaurant recognized by the World's 50 Best Organization. In 2015, Tagaytay's Antonio's was appointed 48th place. In 2016, Chef Margarita Fores (CIBO, Grace Park) was also awarded Asia's Best Female Chef 2016 while ABV and The Curator were included in the Asia's 50 Best Bars list, ranking 14th and 16th, respectively.
