I Can Cook This One Dish Well: The Easiest Keto Pandesal Recipe

Marketing consultant Jeremiah Causing reveals how he makes pandesal in six easy steps.

We're heading to the kitchen. I Can Cook This One Dish Well features not just famous chefs and foodies, but also businessmen, creatives, and regular Joes who have perfected that one amazing plate, whether it may be stew or cake, steak or sandwich (that counts). Take a page from these men who know how to feed the body and, more important, nourish the soul. This week, a marketing consultant shares his no-guilt bread recipe.

Many people have been choosing to better themselves during the quarantine. For Jeremiah Causing, a marketing and business consultant for SMEs, it's all about making small improvements in his lifestyle, from developing a hobby to eating healthy. He's been spending the worst of the pandemic in Pampanga and his keto pandesal recipe is the result of his self-improvement.

"If you are on a low-carb diet, you would know how hard it is to find a bread recipe that promises the taste of bread and has the consistency of an actual bread made with all the carbs from regular flour," he tells Esquire. Unlike most of the quarantine bread recipes we've seen where there's a lot of kneading and proofing and kneading, Causing's version is a quick six-step road to low-carb satisfaction. In fact, the whole process takes just a little over an hour. It's a fast fix for anyone who needs a little cheesy bread to go with their cup of coffee.

  • 1 1/4 cups almond flour
  • 5 tbsps Psyllium husk powder
  • 1 tbsp Stevia sweetener
  • Pinch of salt
  • 2 tsps baking powder

  • 40g melted butter
  • 2 tbsp of apple cider vinegar
  • 1 egg yolk
  • 1 cup of boiling water
  • 3 beaten egg whites

  • Mozzarella, cubed

  • Mixing bowl
  • Spatula
  • Whisk
  • Baking tray, line with parchment paper

1| Mix all the dry ingredients first.

2| Add the wet ingredients one by one, starting with the butter, then water, then eggs.

3| Use an ice cream scoop to ensure that each serving comes out the same size. At this point, preheat the oven to 350 degrees Fahrenheit.

4| Form a ball with the dough. Create a well in the middle to insert the cube of mozzarella, then make sure to blanket the cheese completely with dough.

5| Bake the oven for 30 minutes.

6| Let the cooked bread rest for another 30 minutes.
