This Filipino Bakery in New York City Has a 10,000-Person Waiting List

Kora’s innovative takes on traditional Filipino recipes would excite anyone from the Filipino diaspora and beyond.

NYC bakery Kora made headlines last year for having a waitlist of over 800 eager eaters. But now, one year later, that number has skyrocketed to 10,000, according to Bon Appetit. The Filipino bakery is owned by Filipino-Americans Kimberly Camara and Kevin Borja, children of Filipino immigrants whose recipes they’ve adapted and shared with the NYC community. Camara named the online bakery, Kora, after her late Filipino grandmother, Corazon.

The family matriarch passed away in January 2020, and a few months later in March, Camara and Borja were among the many who were laid off from their jobs at the start of the pandemic. On a whim, Camara created doughnuts from leftover ube and dough and sold them on Instagram.

Although there was no monetary motivation behind those first doughnuts, demand for a taste of Filipino baked goods was on the rise, and the rest, as they say, is history.

While you can find Filipino bread and doughnuts at about every barangay bakery, they’re rare finds in places like NYC, where locals are clearly taken with Kora’s products. With a 10,000-person waitlist, Kora’s partners decided to get a commissary space to keep up with the bakery’s huge demand.

As Instagram is the bakery’s most popular platform, it’s no wonder its products blew up. Filipino pastries are colorful and delicious, and Kora’s innovative take on traditional Filipino recipes would excite anyone from the Filipino diaspora and beyond.
