Not that we need external validation to know that Filipino food is truly great stuff, but it's always worth celebrating when our cuisine gains recognition on a global scale. And you'll want to do just that, as two Filipino restaurants have landed on no less than The New York Times2021 Restaurant List: Archipelago in Seattle, and Kasama in Chicago.

Archipelago in Seattle is known for its modern Filipino eats by Filipino-American chef Aaron Verzosa, and Filipino-American artist and designer-restaurateur Amber Manuguid. Think stick-to-your-ribs lugaw with Alaskan spot prawns and weathervane scallops; and savory plates that include a crispy pork belly with rice tinged with black truffle and dinuguan.

Imagine tucking into this loaded bowl of lugaw on a cold day.

Kasama, on the other hand, is owned by real-life partners Genie Kwon and Timothy Flores, and they cook up up eye-opening dishes with Filipino flavors and elements. Just some of these are a sandwich with grilled longganisa, pickled green papaya, and giardiniera mustard; and a small plate of pork belly with crisp, bubbly skin, paired with a piquant radish-jicama salad to cut against the pork's richness.
