Bai's Lechon

What is Christmas feast without some roast pork? A whole pig might seem too much for a simple and elegant situation, so how about something more subtle but with just as much impact? Bai's offers Cebu lechon-style porchetta. Complete with crispy skin and stuffed with tanglad, no sauce is necessary.

Notes: It's priced from P675 to P2,700. For orders, contact 0917-582-5333.

Mojama from Kapeng Mainit

Brawny proteins don't just include pork and beef. In the rare case that you're going light for the holidays, Chef Bryan Francisco came up with a wonderful mojama, which is similar to prosciutto but made with fish. Tuna is the default, but he changes it up every now and then.

Notes: Price varies depending on fish, expect it to be between P300 to P400. For orders, contact 0917-557-3375.
