According to Egasse, the secret to their quality meats is how they are frozen. He cites salmon meat available in major supermarkets. These salmon don’t taste as fresh as those served abroad because they are frozen, defrosted, and frozen repeatedly as they are transported from the source, to the trader, to the supermarkets, and then to your home. 

Gerald.PH only selects salmon that were frozen at the site of origin, and remains frozen until you need to thaw it at home.

“Freezing should be done at the origin, right after the salmon is killed and filleted,” said Egasse. The grocer only works with suppliers who can ensure their meats remain in deep freeze at all stages of storage transportation. Even Gerald.PH has its own frozen storage facility in Manila, which is kept at a constant temperature of -20 degrees Celsius. 

They also don’t rely on third-party couriers in delivering their meats. Gerald.PH has its own fleet of cold storage vans to deliver goods at your door. That’s why when you thaw their meats, they always have a fresh taste and texture.
