Welcome to blank_space: Like Any Real Love, This Bar's Menu Is Ever Changing
They've got a blank space, baby...every month.

Dating apps have trained us to believe, for better or worse, that commitment is a risky proposition. Why invest in one person when another profile is only a swipe away? The same logic quietly governs much of hospitality. As bars proliferate around Metro Manila, once a bar discovers a drink that sells, the safest move is to keep it around. Familiarity breeds loyalty. Consistency drives revenue.
Which is why blank_space's decision to rebuild its signature menu every month feels bold, almost daredevil.
When asked whether signatures or classics drive more purchases, industry pioneer Ken Bandivas gives a surprisingly simple answer: both. The distinction matters because classics and signatures perform different functions. Classics are the canon. They provide a common language for drinkers and bartenders alike. But they can also be challenging. A Last Word can strike an uninitiated palate as aggressively tart. A Negroni's bitterness can feel less sophisticated than simply unpleasant.
Signature cocktails often act as gentler entry points. They have names that are often pulled from a shared experience of music, movies, experiences, or landmarks. They introduce unfamiliar ideas through more approachable flavor profiles, translating broader cocktail culture into something local palates can immediately enjoy. If classics are the destination, signatures are the welcome mat. Or, to borrow a famous cocktail's name, they are the Cosmopolitan before one becomes fully cosmopolitan.
Most bars treat signature menus as products to be optimized. They observe which drinks move, identify emerging favorites, and gradually adjust the lineup over time. The process resembles product development as much as hospitality.

At blank_space, operations manager RJ Ramirez and his team have turned that process into a recurring exercise. Rather than spending months refining a menu before settling into a long period of stability, they compress the cycle into a monthly ritual. Every menu is temporary. Every concept has an expiration date. Every month begins with a blank slate.
That requires a remarkable amount of confidence because the challenge shifts from merely creative to relational.
A rotating menu becomes a test of mutual trust between bar and guest. The bar asks patrons to return without the guarantee that their favorite drink will still be waiting for them. In exchange, guests trust the team to deliver the same level of quality, thoughtfulness, and technical precision regardless of theme.
In a sense, blank_space is asking its customers to fall in love with the bartender rather than the cocktail.
That trust becomes even more interesting when the menu responds to the cultural moment. The inaugural June menu takes inspiration from Coachella 2026—not simply the music festival itself, but the atmosphere surrounding it. Fashion, art installations, desert heat, nostalgia, self-expression, and collective energy become the lens through which the drinks are imagined. The menu behaves less like a list of beverages and more like a temporary exhibition.

It's a curatorial approach borrowed from galleries, where visitors expect the experience to evolve rather than remain fixed. Nobody asks why an exhibition ended. Its transient nature is part of what gives it meaning.
The same logic applies here. The knowledge that a drink will not be around forever changes how it is experienced. A cocktail stops being a permanent fixture and becomes an event.
And that may be the most compelling reason to return. Not because the drink you loved last month is still there, but because it isn't.
In an era obsessed with algorithms, optimization, and giving people more of what they already know they like, blank_space is betting on something refreshingly old-fashioned: curiosity. The belief that guests will come back not for certainty, but for discovery.
That's a risky proposition. Then again, so is any relationship worth keeping.

blank_space is at Unit 102, Building C, Mandala Park, Mandaluyong City. It is open from 5:59 p.m. onwards, from Tuesday to Sunday.
