Not Your Basic Brunch: Project Vino Reserve in Makati Welcomes Daytime Guests

Come for the pancakes, stay for the mimosa.

It is always five o'clock somewhere. Even on a weekend morning, when all you want to do is pour yourself a generous glass of wine after a draining work week. But if you want to do it right, Project Vino Reserve over at the Proscenium at Rockwell now serves brunch—mimosa and sangria included—every Saturday and Sunday starting at 11 a.m.

"Our new home here in Rockwell has been like a family for us. There are incredibly many more, and we have a lot of tenants, so they keep asking for more and more. And so we decided to do a brunch, a brunch of essentials. We prefer a boozy brunch, but we also do serve juices and coffee," Project Vino co-owner Rob Martin tells members of the press during a preview of the new menu on May 7. Their coffee comes from Yardstick.

Project Vino, obviously a wine bar, started out in the Makati F&B scene with the OG Poblacion branch in 2022. Two years later, in January 2024, they officially welcomed guests in an outpost down south at Alabang West Parade; then, in November 2024, an elevated wine-and-dine experience at the Proscenium at Rockwell, called Project Vino Reserve.

"When we started Project Vino a couple of years ago, it was a small, quiet wine bar. It's very intimate, and over the course of that time, people kept asking for more and asking for different," Martin adds about the birth of Project Vino Reserve.

Project Vino Reserve's Brunch Menu

The brunch menu is both familiar and refined, with items such as your usual pancakes and poached egg, but with an indulgent experience.

Take, for example, the Rosti and Bacon, a dish of crispy potato with rich egg yolk, pecorino cream, and chili oil. That mix of saltiness and creaminess is everything you need for a slow morning.

If you're more on the spicy side, the Chorizo Shakshuka Flatbread is packed with a strong chili flavor that's tempered by the pomodoro sauce and feta. Of course, it's not brunch without the quail eggs. It's great for sharing, too.

The more traditional brunch dishes are the Eggs Royale, which has a layer of smoked salmon and hollandaise over an English muffin, while the Croque Madame brings together melty layers upon layers of prosciutto, gruyere, and a sunny-side up egg on top.

Monte Cristo, which has a berry compote; Pancakes with Red Wine Syrup and Lemon Cream; and Peanut Butter & Jelly Opera Cake, with poached pear and almond biscuit, are perfect for the sweet tooth.

Of course, it's not Project Vino without wine; and it's not brunch without a glass of mimosa (sparkling wine and orange juice) and/or bellini (sparkling wine and peach puree). We recommend their signature San Sebastian, which is a refreshing mix of wine, lemon soda, and raspberries—perfect for the Metro Manila heat.

While Project Vino Reserve is in a tucked-away spot that's an overpass away from Powerplant Mall, it's worth walking or driving to, especially if you're looking to take a brunch break, whether by yourself or with friends.
