Raffles Hotel Harvests Its Own Honey From Its Own Mini Bee Farm

When you order something from the Honeylicious Afternoon Tea menu of Raffles Hotel in Makati City, you should know that the honey used in the dishes and drink comes from the hotel’s own in-house bee colony. 

Located in the hotel’s outdoor herb garden at the hotel’s second level, the small bee farm has been there for about a year and a half. It is the hotel’s own way of managing its own resources to promote sustainability and environment-friendly practices.

At the launch, there was a quick demonstration of how exactly honey is extracted from the honeycombs from Chef Bèla and beekeeper Katya Rieck. Afterwards, the honey was served to guests.

The afternoon tea menu includes a selection of sweet and savory canapés from the hotel’s executive chef, Bèla Rieck. Try the honey dates wrapped in prosciutto skewers, honey Gorgonzola and arugula sandwich, Honey Osoman infused white chocolate tart, and Tahini and honey macarons.
