For 2 Nights Only: Mrs. Saldo's Takes Over The Coconut Club Singapore
Year 2025 marks a bold new chapter for Chef Rhea Rizzo of Mrs. Saldo's, the beloved private dining restaurant in Silang, Cavite, as she ventures beyond her comfort zone to make her exceptional culinary creations more accessible to eager diners. Following a highly successful three-month residency at the Oppein Showroom in Karrivin Studios, Makati, which concluded on January 11, Rizzo now sets her sights on Singapore—specifically the iconic Coconut Club.

Known for her unique style of serving "Cross-Border Comfort Food," Rizzo skillfully marries the elegance of French classical techniques with the vibrant flavors of Southeast Asia. Her creations draw inspiration from her travels and experiences in Bangkok, Ubud, and Napa Valley. Her time spent cooking in the kitchen of Gaggan Anand, a superstar chef from Thailand, further solidified her status and credibility as one of our country's most promising female chefs.
The Coconut Club's Signature Nasi Lemak with Fried Chicken

The Coconut Club, on the other hand, is a distinguished culinary landmark in Singapore. Many enthusiasts praise it for serving what they consider the best Nasi Lemak they've ever tasted. The restaurant has been helmed by Chef Daniel Sia since 2016, offering a signature dish featuring coconut milk-infused rice that draws diners from all around. With a Michelin Bib Gourmand recognition under its belt for its Beach Road branch, this restaurant with sunny, breezy, island vibe interiors, almost always appears on the must-visit list of tourists.
"[The menu will feature] Filipino regional cooking, as I am on a journey of discovering my roots as a chef," says Rizzo.

The kitchen takeover of Mrs. Saldo’s happens on March 27 and 28 at Coconut Club’s newest River Valley branch located inside New Bahru, a former high school site transformed into a creative lifestyle destination.
"[The menu will feature] Filipino regional cooking, as I am on a journey of discovering my roots as a chef. It will also include Indonesian and Peranakan influences, inspired by the narrative of Nasi Lemak and a deep desire to understand its story," Rizzo explains the concept of the collaboration.
The Coconut Club has been helmed by Chef Daniel Sia since 2016.

She is expected to showcase her version of piaya, puto, batchoy, and chicken inasal for this set menu-only offering. The highlight dish will be Coconut Club’s famous coconut rice, but this time paired with Filipino staples such as chicken adobo flakes, duck adobo, oxtail kare-kare, fried saba, and red salted egg.
