Having a cocktail bar definitely enhances your guests' drinking experience, making your parties and events more fun and enjoyable. Nightcap Manila, a mobile bar and cocktail catering service, takes things to the next level by offering bespoke cocktail customization. This service allows clients to create cocktails tailored to their taste preferences and the theme of their event.

The entire process is collaborative, starting with clients filling out a form that details their flavor preferences, chosen alcohol bases, and event specifics before visiting the Nightcap Manila Tasting Room located on Scout Chuatoco in Quezon City. This approach ensures that every cocktail is meticulously crafted to complement the event, making it truly one-of-a-kind.

“While other mobile bars may focus on tequila shots or craft beers, we want to keep the spotlight on our craft cocktails," says Nightcap Manila cofounder Aira So. She says even those who typically prefer beer or whiskey often find themselves enjoying their cocktails.

"We understand that taste preferences vary, which is why we offer a wide range of options— from signature cocktails to classics, and even non-alcoholic drinks. At the end of the day, our goal is to make sure everyone appreciates and enjoys the experience,” So adds.

Signature Sips

Nightcap Manila's diverse menu features a wide range of cocktails, from spirit-forward concoctions to lighter, refreshing options. Its Signature Cocktails offer a unique blend of flavors, each carrying its own story and inspiration. The Salted Plum Margarita brings East and West together by using Asian Kiamoy powder for a salty contrast in a tequila, raspberry, and pomelo concoction. The Muscat Sour captures summertime in Japan with gin, white grape, and egg whites, offering a floral pepper mix followed by a crisp, silky finish. Rose Quartz combines gin, rose, dalandan, and tonic to create a refreshingly botanical pink drink reminiscent of a Garden of Eden. Golden Tropics blends bourbon with mango, elderflower, and lime for a taste reminiscent of a beachy Philippine afternoon. Act One offers a nostalgic cinema experience with a brown butter bourbon, cherry heering, beetroot caramel, and chocolate bitters, delivering layers of rich and velvety flavors. Peach Fresco presents a countryside vibe with dark rum, peach, beer syrup, and sonic, yielding a refreshing burst of flavor with the perfect blend of bitter and sweet.

A Toast to Innovation

Behind Nightcap Manila are three close friends with a shared love for quality cocktails—Aira So, Jamille Chua, and Klaire Chua. During the pandemic, they initially turned to wine and whisky activities and soon began crafting their own cocktails. Frustrated with the lack of quality cocktails available in the market, they created their own cocktail kits, which included pre-measured ingredients and detailed instructions for mixing. These kits allowed people to enjoy the cocktail-making experience at home, either alone, with family, or virtually with friends."

As the pandemic began to ease, the trio saw an opportunity to expand Nightcap Manila’s offerings. They realized that many mobile bar services offered colorful, sugary shots, but there was a gap in the market for premium, well-balanced cocktails catering to sophisticated tastes. This led to the birth of their mobile bar and catering service, which offers customized cocktail experiences with a focus on quality, finesse, and presentation.

Each of the co-founders brings a unique skill set to the table. Jamille manages operations, Klaire oversees logistics and client relations, while Aira handles marketing. Inspired by Jamille's annual themed birthday celebrations, every detail is carefully considered for Nightcap Manila events, the ladies say. Their aesthetic is reflected in how they craft each client’s experience.

Their events range from intimate gatherings of 30 people to large-scale events with over 1,800 guests. Their largest event to date was a Christmas party for Chevron, where they successfully served premium cocktails to nearly 2,000 guests. Other notable brands Nightcap Manila has worked with include H&M x Rabanne, ISSY, Pond's, Premiere, and Rexon.

Celebrating its second anniversary, Nightcap Manila hosted a memorable gathering at the Residences at Westin, bringing together patrons, partners, family, friends, and select media. Held on the 51st floor, the event showcased a captivating Nightcap Manila flute wall and a floral display by Paraluman, transforming each Signature Cocktail into a work of art. A delightful feature was the custom gin infusion station, offering guests the chance to craft their own blends from a selection of 13 botanicals. The evening was perfectly complemented by music from Junoy Manalo and Emel Rowe, setting an intimate and celebratory tone for this special occasion. Indeed, Nightcap Manila has carved out a niche for itself in the Filipino event scene, setting a new standard for mobile bars.
