Whisky Spotlight: The Dalmore 12 Year Old Sherry Cask Select Is a Subtle Update to an Old Favorite
Most Scotch whisky brands have a long and proud history, and The Dalmore is no exception. With a story that dates back to the 13th century, the premium brand owned by Whyte & Mackay (and Emperador Inc) is often considered in a class of its own, producing single malts that sits at the top end of the scores of whiskies produced by Scotland.
In September last year, The Dalmore introduced a new variant to its Principal Collection. The Dalmore 12 Year Old Sherry Cask Select is a “union of the finest oak casks seasoned with a unique blend of rare and aged sherry, born from an enduring passion to create exceptional single malts that honor the sanctity of the cask,” according to the distillery.
Master Distiller Richard Paterson selected three cooperage (barrel or cask makers) partners from Andalucia, Southern Spain: Tevasa, Vasyma, and Paez, to realize his vision for his latest creation. Together they curated the perfect oak casks and created a bespoke sherry blend to season these casks in order to realize the exact flavor profile desired by Paterson.

A cut above the rest
The Dalmore 12 Year Old Sherry Cask Select matures for 10 years in American white oak ex-bourbon casks. Meanwhile the European and American oaks are selected for their active, extractive qualities, and crafted into casks. Then, a bespoke sherry blend of aged oloroso and Pedro Xime?nez sherry is crafted by the cooperage partners, and further customized for each maker ahead of seasoning and filling the casks for a full finish of up to three years.
The result is a pleasant combination of sherry cask finishes, each providing layers of sherry and oak influence for a drink that features sweet fruit and decadent spice.
There are fragrant caramelized orange, rich ginger, and sultanas laced with honey on the nose. Then a taste of dark chocolate combined with freshly crushed almonds and a dusting of cinnamon is revealed. Finally, there is a sweet Pedro Xime?nez influence, with hints of sweet mangoes, panna cotta, and lemon sponge cake.
The Dalmore 12 Year Old Sherry Cask Select provides a deeper, more thoughtful layer to those familiar with the brand’s standard 12 Year Old. Think of it as a subtle update to a classic favorite.
